Ladies in Black Bake Off — Zucchini Muffin Mania
With all the insane, record-breaking heat lately, I fell behind on gardening.
This is what I found growing today — GIANT ZUCCHINI!!
I needed to do something with all this zucchini. But I couldn’t think of anything off of the top of my head that I wanted to make. Luckily folks in the Ladies in Black Group on Facebook came to my rescue and suggested some great recipes for zucchini muffins. I have made zucchini bread and muffins before. And I found myself really motivated to try the suggested recipes.
First up, Le Professeur Gothique’s suggestion to try a zucchini muffin recipe at this link.
And voila . . . These were amazing. Perfect with espresso over ice.
Next up, a recipe suggested by News from the Cave. Ms. Cave’s recipe was very different from the first — it called for wheat flour, wheat germ, oatmeal and instead of butter, oil.
The result — another great recipe, with a completely different taste. This one had more crunch to it. Perfect breakfast muffin.
Both recipes were great. Unfortunately, two batches of muffins were no match for my bumper crop of zucchinis. So, I still have to figure out what do with the others.

yum! I made stuffed zucchini from a recipe I found on Skinnytaste. Probably won’t make much of a dent in your crop but… yeah. There ya go.
